Umami in your kitchen
It is in tomatoes, cheese, fish… in many everyday foods. See where to find the fifth basic taste.
The elderly correspond to about 11% of the Brazilian population, according to the Brazilian Institute of Geography and Statistics (IBGE). In this group, it is normal that there is a decrease in the ability to perceive different tastes, mainly sweet and salty. This is due to several factors, among them the atrophy of taste buds and the increased use of medications that often occurs at this stage. This process, which begins around age 60, can compromise food choices, making the diet poor and unbalanced.
The solution? How about investing in foods with a lot of flavor to revive the elderly’s palate? A study conducted in the United Kingdom with people in this age group concluded that the introduction of umami in the diet improved their health status by increasing immunity and the feeling of well-being. Thus, tomato, mushrooms, meats, and dairy products are good options.
Since the ingredients above contain the fifth taste, any dish that includes them will have a special flavor. We have selected some easy and quick recipes.
