Salad in Parmesan Basket

Ingredients

  • 3 cups (tea) coarsely grated parmesan cheese (300 g)
  • half cup (tea) mayonnaise (50 g)
  • half cup (tea) milk (100 ml)
  • half clove of garlic, pressed (3 g)
  • 1 cup (tea) grated mozzarella (100 g)
  • 6 leaves iceberg lettuce, torn (120 g)
  • 6 cherry tomatoes cut into 4 equal parts (60 g)
  • 1 small carrot, grated (120 g)

Modo de preparo

  1. In a small skillet, spread half cup (tea) of parmesan cheese and heat over medium heat for 2 minutes, or until it begins to brown. Carefully remove with a spatula and flip over the bottom of a small bowl or glass.
  2. Let cool until it hardens and takes the shape of a “basket.” Repeat the process with the remaining parmesan, making 5 more baskets.
  3. In a food processor or blender, place the mayonnaise, milk, garlic, and mozzarella, and blend for 1 minute, or until smooth.
  4. Fill the parmesan baskets with the lettuce leaves, cherry tomatoes, and carrot, drizzle with the sauce, and serve immediately.

Tip: parmesan cheese and tomato are foods that contain glutamate in large proportion and therefore provide Umami (the 5th taste) in a more pronounced way.
