Cod with Spinach

Preparation time: (+ 24 h for pre-soaking the cod)

Serves: 8 portions

Your family’s oven-baked cod will become legendary with this recipe! The right ingredients make this dish flavorful and irresistible.

The main accompaniment is spinach, and its flavor is enhanced by walnuts, bell pepper, eggs, and olives. A simple recipe packed with umami.

Ingredients

  • 1 medium onion, sliced (60 g)
  • 1 small red bell pepper, cut into thin strips (30 g)
  • 2 hard-boiled eggs, sliced (90 g)
  • 1 kg desalted cod, blanched and flaked
  • 1½ cups sliced green olives (60 g)
  • ½ cup olive oil (100 ml)
  • 1 packet bonito-based seasoning (HONDASHI®)
  • leaves from one bundle of spinach (100 g)
  • ½ cup coarsely chopped walnuts (40 g)

Modo de preparo

  1. In a medium rectangular baking dish (20 × 30 cm), layer onion, bell pepper, egg, cod, and olives.
  2. Drizzle with olive oil mixed with HONDASHI®, cover with aluminum foil, and bake in a preheated medium oven (180 °C / 350 °F) for 20 minutes, or until the onion and bell pepper are tender.
  3. Remove the foil, scatter the spinach and walnuts on top, and return the dish to the hot but turned-off oven for 5 more minutes, or until the spinach wilts.
  4. Serve immediately.

Tip: For the pre-soak, place the cod in a large bowl, cover with water, and refrigerate overnight, changing the water at least four times. Then blanch and flake it. Adding tomato will give the dish an extra umami boost.
