Fresh cream is different from boxed cream

Used especially in dessert recipes, the ingredient can be made at home.

Fresh cream is nothing more than the fat from milk, the cream. It can be found in the dairy section of supermarkets, refrigerated, and ideally should be consumed quickly, because it spoils in a short time.

Pay close attention to the text of the recipes, because FRESH cream is not the same as boxed or canned cream, also known as homogenized cream. And the difference is not only that one is more… fresh. The boxed or canned ones go through a sterilization process at very high temperatures (UHT), which differs from the pasteurization process used in preparing the milk that gives rise to fresh cream.
