Sweet pamonha

Preparation time:

Serves: 10 portions

Select the best corn cobs, because it’s time to make sweet pamonha! Here, you’ll learn how to cook one of Brazil’s most beloved treats.

Check out all the ingredients below, as well as the step-by-step preparation we’ve created to make the recipe easier for you.

Ingredients

  • 5 large corn cobs, with husks (2.2 Kg)
  • half a cup of milk (100 ml)
  • 1 tablespoon unsalted butter, melted (15 g)
  • 1 and a half cups sugar (225 g)
  • a pinch of salt (0.4 g)

Modo de preparo

  1. Using a large knife, cut the corn cobs at the base and separate the husks (set them aside for assembling). Cut off the tips of the husks and discard them.
  2. With a knife, remove the kernels from the cobs and transfer them to a blender jar. Add the milk, butter, sugar, and salt, and blend on medium speed for 2 minutes, or until you get a smooth cream.
  3. Wash the corn husks, boil them for 3 minutes, and dry them with paper towels. Fold each one into a cone shape, overlapping the sides and leaving the wider part facing up. Hold the overlap with your fingers and fold the bottom part of the cone upward, forming a small cup. Fill it with a little of the corn mixture.
  4. Cover the top of the cup with another husk and fold the leftover tip of the husk toward the center, repeating the same process to seal the edge of the first cup with this second one, in the opposite direction. Tie with pieces of kitchen string.
  5. Cook the pamonhas in boiling water for 1 hour and 15 minutes, or until firm.
  6. Remove from the heat, drain, and serve warm or at room temperature.
