Smashed Potatoes

Roasted potatoes are one of the most versatile dishes in our cuisine. Whether served with chicken, fish, meat, or sausage, they’re always delicious! With Portal Umami’s smashed potatoes recipe, you’ll amaze your guests and ensure the perfect side dish for any meal.

But what exactly are “batatas ao murro”? They’re called that because the potatoes are gently pressed with hands after cooking, before going into the oven or skillet. The result is crispy on the outside, tender on the inside, and utterly irresistible! Shall we learn how to make them?

Ingredients

  • 8 medium "English" potatoes with skin (approx. 1.6 kg)
  • 4 tablespoons olive oil (60 ml)
  • 2 garlic cloves, sliced (10 g)
  • 4 sprigs of thyme or rosemary, leaves removed
  • ½ teaspoon ground black pepper
  • 1½ teaspoons coarse salt (approx. 7.5 g)

Modo de preparo

  1. In a large pot, cover the potatoes with water and bring to a boil over high heat. Reduce the heat and cook for 30 minutes or until tender. Remove from heat and drain.
  2. On a cutting board, gently press each potato with the palm of your hand until slightly flattened (use a clean, dry kitchen towel to avoid burns).
  3. Spread half of the olive oil in a large baking pan, then arrange the potatoes on top. Season with the garlic, thyme (or rosemary), black pepper, and salt; drizzle with the remaining olive oil.
  4. Bake in a preheated oven at 180 °C (medium) for 40 minutes, turning halfway through, or until golden.
  5. Remove from oven and serve immediately.
