Savory pamonha

Grab the green corn and get ready to learn this traditional savory pamonha recipe that will make everyone’s mouth water!

Ingredients

  • 10 green corn cobs (2.2 Kg)
  • 1 cup milk (200 ml)
  • 1 tablespoon sugar (12 g)
  • 2 teaspoons salt (10 g)
  • 1 tablespoon margarine (15 g)
  • 1 cup soybean oil (200 ml)
  • half a teaspoon baking powder (2 g)
  • 100 g grated parmesan cheese
  • husks for cooking the pamonhas

Modo de preparo

  1. Remove the husks from the corn cobs and set them aside for cooking the pamonhas.
  2. Grate the corn or remove the kernels with a knife and blend them with the milk until smooth.
  3. Transfer the blended corn to a saucepan, add the other ingredients except for the husks, and cook over medium heat, stirring constantly, until thickened. Remove from the heat and let cool slightly.
  4. Wash and dry the reserved husks. Fold each one into a cone shape, overlapping the sides and leaving the wider part facing up. Hold the overlap with your fingers and fold the bottom of the cone upward, forming a small cup. Fill it with a little of the corn mixture, close it like a small package, and tie with kitchen string.
  5. Cook in boiling water for about 1 hour, or until the husk changes color and turns yellowish.
  6. Remove from the heat, drain, and serve.
