Rosti Potatoes

For those who enjoy a quick side dish or a different appetizer, rösti potatoes are perfect!

This easy recipe with Asterix potatoes and parmesan cheese is mouthwatering. With just a few ingredients, it yields 4 portions. Learn the step-by-step method and discover your new favorite dish!

Ingredients

  • 3 medium Asterix potatoes with skin (600 g)
  • ½ teaspoon salt (2.5 g)
  • ½ teaspoon AJI-NO-MOTO® monosodium glutamate (2 g)
  • 4 tablespoons olive oil (60 ml)
  • 1 cup grated parmesan cheese (100 g)

Modo de preparo

  1. Using a coarse grater, grate the potatoes, mix with salt, and let rest in a sieve for 10 minutes. Press with the back of a large spoon to remove excess liquid.
  2. Add AJI-NO-MOTO® and mix.
  3. In a medium nonstick skillet, place half of the olive oil and heat over medium heat.
  4. Cover the bottom of the skillet with half of the reserved potatoes and press lightly with a spatula.
  5. Spread the grated cheese and top with the remaining potatoes. Drizzle with the remaining oil and press again with the spatula to compact.
  6. Lower the heat and cook for 15 minutes, flipping halfway through, or until golden on both sides.
  7. Remove from the heat and serve immediately.

Tip: Rösti potatoes are typical of Swiss cuisine and used to be part of breakfast. Asterix potatoes are drier, making them the ideal variety for this recipe. To flip, place a large flat plate over the skillet, invert carefully to avoid burns, and transfer the rösti onto the plate. Then slide it back into the skillet.
