Roast pork leg with potatoes

Ingredients

  • 1 piece pork leg, cleaned (2 kg)
  • 1 large onion, thinly sliced (200 g)
  • 2 cloves garlic, pressed (10 g)
  • 1 and a half tablespoons salt (22.5 g)
  • half a cup white wine vinegar (100 ml)
  • 1 cup water (200 ml)
  • 2 cans dark beer (700 ml)
  • 700 g medium potatoes, cut into 4 parts

Modo de preparo

  1. Using a knife, make cuts on the surface of the pork leg and place it in a large bowl.
  2. In another bowl, place the onion, garlic, salt, vinegar, water, and beer, and mix. Pour the marinade over the pork, cover with plastic wrap, and refrigerate for at least 10 hours.
  3. Place the pork leg in a large baking dish and drizzle with the marinade. Cover with aluminum foil and bake in a hot oven (200 degrees), preheated, for 1 hour and 30 minutes.
  4. Remove the foil, add the potatoes, and return the pork to the oven, basting with the marinade every 20 minutes, for another 1 hour and 30 minutes, or until golden.
  5. Remove from the oven, slice, and serve immediately, accompanied by the sauce formed in the baking dish.
