Potato Rösti

For those who enjoy a quick side dish or a different appetizer, potato rösti is ideal!

This easy recipe with Asterix potatoes and Parmesan cheese is mouthwatering. With just a few ingredients, it yields 4 portions. Learn step by step and discover your new favorite dish!

Ingredients

  • 3 medium Asterix potatoes (600 g)
  • ½ teaspoon of salt (2.5 g)
  • ½ teaspoon of AJI-NO-MOTO® monosodium glutamate (2 g)
  • 4 tablespoons of olive oil (60 ml)
  • 1 cup grated Parmesan cheese (100 g)

Modo de preparo

  1. Using a coarse grater, grate the potatoes, add the salt, and let them rest in a sieve for 10 minutes. Press with the back of a large spoon to remove all excess liquid.
  2. Add AJI-NO-MOTO® and mix.
  3. In a medium nonstick skillet, heat half of the olive oil over medium heat.
  4. Cover the bottom of the skillet with half of the grated potato and press lightly with a spatula.
  5. Spread the grated cheese on top and cover with the remaining potato. Drizzle with the rest of the olive oil and press again with the spatula to compact.
  6. Lower the heat and cook for 15 minutes, flipping halfway through, or until golden on both sides.
  7. Remove from heat and serve immediately.

Tips:

  1. Potato rösti is typical of Swiss cuisine and was traditionally part of breakfast.
  2. Asterix potatoes are drier, making them ideal for this recipe.
  3. To flip, place a large flat plate over the skillet, carefully turn the rösti onto the plate, and then slide it back into the skillet.
