Potato Blinis Recipe

Ingredients

  • 2 small Asterix potatoes, cut into cubes (300 g)
  • 8 tablespoons all-purpose flour (80 g)
  • 5 tablespoons heavy cream (75 ml)
  • 2 eggs (100 g)
  • Pinch of salt
  • Pinch of black pepper

Modo de preparo

  1. Place the potatoes in a medium saucepan, cover with water, and bring to a boil over medium heat. Cook for about 20 minutes or until tender.
  2. Drain, transfer to a bowl, and mash with a fork. Add the flour and heavy cream, mixing until smooth.
  3. Add the eggs, salt, and pepper, mixing until the batter is homogeneous.
  4. Heat a small non-stick skillet with a little oil over medium heat. Drop small portions of the batter to form mini pancakes. Cook for 2–3 minutes, flipping halfway, until golden and firm on both sides.
  5. Serve with pâtés or use as a base for canapés.
