Ingredients

  • 3 tablespoons olive oil (45 ml)
  • 1 medium onion, chopped (150 g)
  • 2 garlic cloves, pressed (10 g)
  • 500 g beef chuck, cut into cubes
  • 500 g chicken breast, skinless, bone-in, cut into 6 pieces
  • 1 liter boiling water
  • 3 teaspoons salt (15 g)
  • 1 ear of corn, cut into 3 pieces (220 g)
  • 1 sausage (paio), cubed (150 g)
  • 200 g diced bacon
  • 4 medium potatoes, sliced (800 g)
  • 2 medium carrots, sliced (300 g)
  • ½ small cabbage, coarsely chopped (250 g)
  • 1 large arracacha (parsnip-like root), cut into large cubes (200 g)
  • 3 tablespoons chopped parsley and scallions (15 g)
  • ½ teaspoon ground black pepper

Modo de preparo

  1. In a large pressure cooker, heat the olive oil over high heat. Add the onion and garlic and sauté until golden. Add the beef and chicken, and fry for 10 minutes, or until browned.
  2. Add 2 ½ cups of the boiling water (500 ml), half the salt, and the corn. Close the cooker and cook for 10 minutes after it starts boiling.
  3. Remove from heat, let the pressure release, open the cooker, and add the sausage, bacon, potatoes, carrots, and the remaining water. Cook for another 10 minutes, partially covered, or until the vegetables are tender.
  4. Add the cabbage, arracacha, parsley and scallions, black pepper, and the remaining salt. Simmer on low heat, partially covered, for 10 more minutes.
  5. Remove from heat and serve immediately.
