Ingredients

  • Gnocchi

    • 2 medium plantains, with peel (420 g)
    • 1 egg yolk (20 g)
    • 2 pinches of salt (0.8 g)
    • 3 tablespoons all-purpose flour (30 g)
    • 1 tablespoon unsalted butter (15 g)
  • Sauce

    • 1 tablespoon unsalted butter (15 g)
    • half a small onion, chopped (50 g)
    • 1 cup dried beef, soaked, cooked, and shredded (100 g)
    • half a cup heavy cream (100 g)
    • half a cup milk (100 ml)
    • 4 tablespoons grated parmesan cheese (16 g)
    • 2 tablespoons chopped parsley (10 g)

Modo de preparo

  1. Make the gnocchi: in a medium saucepan, place the plantains, cover with water, and cook for 15 minutes, or until tender.
  2. Meanwhile, prepare the sauce: in a medium saucepan, place the butter and melt over medium heat. Add the onion and sauté for 3 minutes, or until golden.
  3. Add the dried beef and sauté for 2 minutes. Add the cream, milk, and cheese, and cook for 5 minutes, or until the sauce thickens. Remove from the heat and set aside.
  4. Drain the cooking water from the plantains, peel them, and, with a fork or potato masher, mash them until you get a puree. Let cool.
  5. Add the yolk, salt, and gradually the flour, mixing until you get a homogeneous dough.
  6. On a floured surface, roll the dough into cords and cut into gnocchi pieces.
  7. In a medium skillet, heat the butter and add the gnocchi in batches; grill over low heat for 2 minutes, or until golden.
  8. Remove from the heat, drizzle with the hot sauce, sprinkle with parsley, and serve immediately.
