Paulista Couscous

Ingredients

  • 2 tablespoons oil (30 ml)
  • 1 small onion, chopped (100 g)
  • 2 garlic cloves, pressed (10 g)
  • half red bell pepper, chopped (75 g)
  • 2 cans sardines, drained (250 g)
  • 1 can corn, drained (200 g)
  • 2 tablespoons chopped parsley (10 g)
  • half cup tomato pulp (100 ml)
  • 2 cups water (400 ml)
  • 1 teaspoon salt (5 g)
  • 1 cup cornmeal (75 g)
  • 1 small tomato, sliced (100 g)
  • 1 boiled egg, sliced (50 g)

Modo de preparo

  1. In a large saucepan, add the oil and heat over medium heat.
  2. Add the onion, garlic, and bell pepper, and sauté for 3 minutes, or until softened. Add the sardines, corn, parsley, tomato pulp, water, and salt, and cook for another 10 minutes, or until boiling.
  3. Add the cornmeal all at once and stir vigorously until it dries and pulls away from the bottom of the pan.
  4. Remove from heat, transfer to a greased ring mold (19 cm in diameter), decorated with the tomato and egg slices, and let cool slightly.
  5. Unmold and serve immediately.

Tip: while Northeastern couscous is made only with cornmeal, Paulista couscous includes various ingredients in its dough.
