Pasuli (White bean soup)

Looking for a tasty and easy-to-make soup? This soup recipe with calabrese sausage will make your mouth water.

The special touch of this preparation is the seasonings that will make all the difference in the flavor of the dish. Gather the ingredients and get ready to taste umami!

Ingredients

  • 3 tablespoons oil (45 ml)
  • 1 small onion, chopped (100 g)
  • 1 clove garlic, chopped (3 g)
  • 1 medium calabrese smoked sausage, skin removed, chopped (130 g)
  • 1 cup white beans, soaked for 12 hours (170 g)
  • 1 liter water
  • 1 medium carrot, chopped (150 g)
  • 2 medium potatoes, cut into small cubes (400 g)
  • 1 teaspoon salt (5 g)
  • half a teaspoon AJI-NO-MOTO® monosodium glutamate (2 g)
  • 2 pinches black pepper (0.4 g)
  • 2 tablespoons all-purpose flour (20 g)
  • 1 teaspoon hot paprika (5 g)
  • 2 tablespoons chopped parsley (10 g)

Modo de preparo

  1. In a pressure cooker, place 1 tablespoon oil and heat over high heat. Add the onion and garlic, and sauté for 3 minutes, or until golden. Add the sausage and fry for 3 minutes, or until golden. Add the beans and water, cover, and cook over medium heat for 10 minutes after it starts boiling. Turn off the heat and wait for the pressure to release.
  2. Open the pan, add the carrot, potato, salt, AJI-NO-MOTO®, and pepper, and cook over medium heat, partially covered, for 15 minutes, or until the vegetables are tender.
  3. Meanwhile, in a small skillet, place the remaining oil and flour, and heat over low heat. Stir for 1 minute, or until lightly golden. Add the paprika and 1 cup of the soup broth, and mix.
  4. Transfer to the soup pot and cook for another 5 minutes, or until thickened.
  5. Remove from the heat, sprinkle with parsley, and serve immediately.

Tip: pasuli (or pasulj) is a typical Serbian soup that usually includes beans, some type of smoked meat such as bacon or sausage, as well as carrot and onion.
