Oriental Salad

This will be your new favorite salad! With salmon, kale, and shimeji mushrooms, the recipe is a true dish full of umami.

Ingredients

  • half medium bunch of chopped kale (120 g)
  • 1 package sliced smoked salmon, cut into strips (80 g)
  • half tray of shimeji mushrooms, separated and blanched (100 g)
  • 3 tablespoons (soup) extra virgin olive oil (45 ml)
  • 1 tablespoon (soup) lemon juice (15 ml)
  • 1 tablespoon (soup) grated ginger (juice only) (15 ml)
  • half teaspoon salt (2.5 g)
  • 3 tablespoons (soup) skinless almonds, sliced and toasted (25 g)

Modo de preparo

  1. In a large salad bowl, arrange the kale, salmon, and shimeji.
  2. In a small bowl, mix the olive oil, lemon juice, ginger, and salt, and stir. Drizzle over the salad.
  3. Sprinkle the almonds and serve immediately.
