Homemade Chicken in Tomato Sauce

Ingredients

  • 1 tablespoon of oil
  • 4 boneless, skinless chicken thighs (400 g)
  • 1 small chopped onion
  • 2 cloves of chopped garlic
  • 4 large ripe tomatoes, diced
  • 2 bay leaves
  • 2 sprigs of rosemary
  • 2 cups of water (400 ml)
  • ½ teaspoon of salt
  • ½ teaspoon of AJI-NO-MOTO®
  • 1 tablespoon of chopped basil leaves

Modo de preparo

  1. In a large saucepan, heat the oil over high heat. Add the chicken and fry for 10 minutes, turning halfway through, or until golden brown. Add the onion and garlic, and sauté for 3 minutes, or until the onion is golden.
  2. Add the tomato and sauté for 5 minutes, or until the tomato begins to break down. Add the bay leaf, rosemary, water, salt, and AJI-NO-MOTO®, and cook over medium heat, with the pan partially covered, for 25 minutes, or until the sauce has reduced by half and thickened.
  3. Remove from heat, remove the bay leaf and rosemary sprigs, add the basil, and serve immediately.
