Green Tea Crème Brûlée

Ingredients

  • 1 and a half cups milk (300 ml)
  • 1 and a half cups heavy cream (300 ml)
  • half cup dried green tea leaves (35 g)
  • 5 egg yolks (100 g)
  • half cup sugar (75 g)
  • 3 tablespoons granulated sugar (36 g)

Modo de preparo

  1. In a medium saucepan, place the milk and cream and bring to a boil over high heat. Once it starts boiling, add the green tea, remove from the heat, cover, and let steep for 2 minutes.
  2. Meanwhile, in the bowl of a stand mixer, place the yolks and sugar, and beat at medium speed for 2 minutes, or until light and fluffy. Gradually, and always stirring with a whisk (fouet), strain and add the hot milk mixture.
  3. Divide into 6 small heatproof ramekins (8.5 cm in diameter). Bake in a preheated medium oven (180°C / 350°F), in a water bath, for 45 minutes, or until slightly firm around the edges but still creamy in the center.
  4. Remove from the oven, let cool, cover, and refrigerate for at least 3 hours.
  5. Remove from the refrigerator and sprinkle the granulated sugar on top of the cream. Using a torch, caramelize the sugar until golden.
  6. Serve immediately
