This classic dish of Brazilian cuisine is always a great choice when the cold arrives. Enjoy this feijoada recipe from Portal Umami!

Ingredients

  • 1 tablespoon oil (15 ml)
  • 1 garlic clove, crushed (5 g)
  • 1 medium onion, finely chopped (150 g)
  • 1 small piece of paio sausage, sliced thinly (100 g)
  • 200 g dried beef, soaked, boiled, and cubed
  • 200 g smoked pork ribs, soaked and boiled
  • 2 cups dry black beans (350 g)
  • 1 teaspoon salt (5 g)
  • 1.7 liters water
  • 2 tablespoons cachaça (30 ml)

Modo de preparo

  1. In a pressure cooker, add the oil and heat over high heat. Add the garlic and onion, and sauté for 2 minutes, or until the onion softens. Add the paio, dried beef, ribs, beans, salt, water, and cachaça, cover, and cook over low heat for 20 minutes after it starts boiling.
  2. Remove from heat, wait for the pressure to release, and open the cooker. Return to low heat and cook for another 15 minutes, with the lid half-closed, or until the broth thickens.
  3. Remove from heat and serve immediately.

Tips:

  1. Serve with white rice, sautéed collard greens, and cassava flour.

  2. To soak the dried beef and ribs, keep them covered with water for 48 hours in the refrigerator, changing the water at least 6 times.
