Escabeche Sardines

Ingredients

  • 1 large onion, sliced (200 g)
  • 2 medium tomatoes, sliced (300 g)
  • 12 small sardines, cleaned, headless (700 g)
  • 2 cloves garlic, chopped (6 g)
  • 1 sachet bonito fish-based seasoning HONDASHI® (10 g)
  • 1 pinch salt (0.4 g)
  • half cup (tea) olive oil (100 ml)
  • 3 tablespoons (soup) apple cider vinegar (45 ml)

Modo de preparo

  1. In a large baking dish, place half of the onion and tomato.
  2. Spread the sardines, garlic, and sprinkle with HONDASHI® and salt.
  3. Drizzle with olive oil and vinegar, and top with the remaining onion and tomato.
  4. Cover the baking dish with aluminum foil and bake in a medium oven (180 degrees) for 30 minutes. Remove the foil and return to the oven for another 20 minutes.
  5. Remove from the oven and let cool.
  6. Drizzle the sardines with the sauce formed in the baking dish and serve immediately.

Tip: escabeche is a vinegar-based sauce with other seasonings, mainly used to accompany fish.
