Cod Salad

You’ll need flaked, desalted, raw, and shredded cod, red onion, olives, olive oil, and fresh herbs to make a unique and delicious combination.

Ingredients

  • 500 g flaked cod, desalted, raw, and well shredded
  • 2 medium red onions, thinly sliced (300 g)
  • 1 cup (tea) of parsley and chives (40 g)
  • 100 g Chilean black olives, pitted
  • 3 tablespoons (soup) olive oil (45 ml)

Modo de preparo

  1. Drain the cod and place it on a clean cloth. Wrap it like a bundle and twist the cloth to remove all excess water from the fish.
  2. In a medium bowl, place the cod and add the onion, herbs, and olives. Drizzle with olive oil and mix gently. Serve.

Tips

  1. To desalt the flaked cod, place it in a large bowl, cover with water, and refrigerate for 24 hours, changing the water at least 4 times during this period.

  2. This salad is made with raw cod, without boiling.

  3. Shred the cod with a fork or keep it in the cloth used for draining and rub it with your hands over the cloth.

  4. If desired, serve the salad with slices of lightly toasted Italian bread.
