Chicken causa rellena

A simple, different, and delicious recipe that will surprise your guests! Causa rellena is a Peruvian dish made with potato and chicken breast, along with an irresistible seasoning.

Ingredients

  • 5 small Asterix potatoes, cooked and mashed (800 g)
  • 4 tablespoons olive oil (60 ml)
  • 3 tablespoons lemon juice (45 ml)
  • 1 tablespoon ají amarillo chili sauce
  • 1 teaspoon salt (5 g)
  • 1 large chicken breast, skinless and bone-in, cooked and shredded (700 g)
  • 1 cup mayonnaise (200 g)
  • 3 tablespoons chopped celery (30 g)
  • 1 tablespoon chopped parsley (5 g)
  • 2 boiled eggs, cut into wedges (100 g)
  • 1 tablespoon sliced black olives (25 g)
  • 1 small tomato, seedless, diced (130 g)

Modo de preparo

  1. In a large bowl, place the mashed potato, olive oil, lemon juice, chili sauce, and salt, and mix until you get a uniform dough. Set aside.
  2. In a medium bowl, place the shredded chicken and add the mayonnaise, celery, and parsley, and mix.
  3. Assembly: on a flat plate, place a greased round ring (8 cm in diameter) and add a little of the potato purée. Smooth the surface with the back of a spoon and, on top, add some of the chicken. Finish with another layer of potato purée, smoothing the surface with the back of the spoon. Press lightly to compact. Carefully remove the ring and decorate with boiled egg, olive, and tomato.
  4. Repeat the procedure with the remaining ingredients and serve immediately.

Tips:

  1. “Causa rellena” is a typical dish of Peruvian cuisine.

  2. If you prefer, replace the ají amarillo chili sauce with a sauce prepared with 100 ml of olive oil, 1 garlic clove, 2 teaspoons Tabasco sauce, and 10 g of bread crumb soaked in 4 tablespoons corn oil. Blend until smooth.
