Chicken and Mushroom Risotto

Preparation time: (+ 1 hour to hydrate the porcini mushrooms)

Ingredients

  • ½ cup (20g) of Chilean-style dried porcini mushrooms
  • 4 tablespoons (60g) of unsalted butter, chilled
  • 1 small onion, chopped (100g)
  • 400g of boneless, skinless chicken breast, cut into small cubes
  • ½ cup (100ml) of dry white wine
  • 1 ½ cups (255g) of uncooked Arborio rice
  • 1 sachet of SAZÓN® chicken stock powder
  • 4 cups (800ml) of boiling water
  • 1 cup (60g) of finely grated Parmesan cheese
  • 1 cup (140g) of cherry tomatoes, halved

Modo de preparo

  1. In a medium bowl, place the porcini mushrooms, cover with hot water and let soak for 1 hour, or until very soft. Drain, cut into smaller pieces and set aside.
  2. In a medium saucepan, melt half the butter over high heat. Add the onion and sauté for 3 minutes, or until translucent. Add the chicken and fry for 7 minutes, or until golden brown. Add the wine, rice and mushrooms, and cook for 2 minutes. Gradually add the water previously mixed with the chicken broth, and cook over medium heat, stirring constantly, for 20 minutes, or until the liquid has evaporated and the rice is moist and "al dente".
  3. Remove from heat, add the remaining butter, grated cheese and tomato, mix and serve immediately.

Tips:

  1. If desired, garnish with Parmesan shavings.
  2. Arborio rice, also called Italian rice, is ideal for making risotto, as it has thicker grains, absorbing more liquid during cooking without falling apart.
