Cherry Tomato Confit

To make this umami-packed delight, all you need is olive oil, some herbs, and cherry tomatoes. The recipe is simple, serves up to 5 portions, and is perfect for a dinner with guests or a special lunch!

Ingredients

  • 200 g cherry tomatoes
  • 2 pinches salt
  • 1 pinch black pepper
  • 1 bay leaf (1 g)
  • 1 sprig rosemary (5 g)
  • 3 sprigs thyme (9 g)
  • 3 garlic cloves, unpeeled (21 g)
  • 1 cup olive oil (200 ml)

Modo de preparo

  1. Wash and dry the cherry tomatoes well.
  2. In a small baking dish, place the tomatoes and season with salt and pepper.
  3. Add the bay leaf, rosemary, thyme, and garlic. Drizzle with olive oil (enough to cover about half the height of the tomatoes).
  4. Make sure the herbs are submerged in the oil to prevent them from burning in the oven. Bake in a preheated medium oven (180 °C / 350 °F) for about 45 minutes, or until the tomatoes are soft but not falling apart.
  5. Remove from the oven, transfer to a jar with a lid, and refrigerate for up to 1 week.
