Blender Chicken Pie

With leftover roast chicken in the refrigerator, you can prepare a practical, quick, and irresistible blender chicken pie.

This blender chicken pie is fluffy, with a light and flavorful crust, perfect for making any meal delicious. Let’s cook!

Ingredients

  • Filling:

    • 1 small chopped onion
    • 1 can of drained mixed vegetables (200 g)
    • 1 and a half cups of leftover roast chicken
    • half a teaspoon of ground nutmeg
    • half a cup of creamy ricotta cheese (100 g)
  • Dough:

    • 3 eggs
    • 1 large ripe tomato, chopped
    • half a cup of oil (100 ml)
    • 2 cups of milk (400 ml)
    • 1 teaspoon of salt
    • half a teaspoon of AJI-NO-MOTO®
    • 3 cups of wheat flour (330 g)
    • 1 tablespoon of baking powder

Modo de preparo

  1. Make the filling: In a medium bowl, combine the onion, mixed vegetables, chicken, nutmeg, and ricotta cheese, and mix. Set aside.
  2. Prepare the dough: In a blender, combine the eggs, tomato, oil, milk, salt, and AJI-NO-MOTO®, and blend on medium speed for 1 minute, or until smooth. Transfer to a large bowl and gradually add the flour, stirring constantly, until a smooth dough forms. Add the baking powder and mix until incorporated.
  3. In a greased and floured medium rectangular baking pan (20 x 30 cm), pour half of the dough, arrange the filling, and cover with the remaining dough. Bake in a preheated medium oven (180 degrees Celsius) for 40 minutes, or until the surface is golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and serve immediately.
