Bean Soup with Potato and Pork

Leftover beans in the fridge can be turned into an amazing meal with this bean soup recipe with pork. Rich in flavor and easy to prepare, it’s perfect to warm up any day.

Gather the ingredients, grab the pot, and learn how to make this different and irresistible bean soup.

Ingredients

  • 1 piece pork belly, sliced and cut into crosswise strips (260 g)
  • 3 small potatoes, diced small (450 g)
  • 1 and a half cups (tea) leftover cooked beans with broth
  • 2 cups (tea) water (400 ml)
  • half teaspoon salt
  • half teaspoon AJI-NO-MOTO®
  • 1 tablespoon (soup) parsley leaves and stems, chopped

Modo de preparo

  1. In a large saucepan, place the meat gradually and fry in its own fat for 15 minutes, turning on all sides, or until browned. Remove from the pan and set aside.
  2. In the same pan, using the fat left at the bottom, add the potatoes and fry for 5 minutes, or until golden. Add the beans, water, salt, and AJI-NO-MOTO®, and cook over medium heat, partially covered, for 20 minutes, or until the potatoes are tender. Remove from the heat, transfer to a blender jar, and blend for 2 minutes, or until smooth and creamy.
  3. Finish with the reserved meat and parsley, and serve immediately.
