Basque Cheesecake Umami

Ingredients

  • 3 small containers of cream cheese (450 g)
  • 1 cup grated parmesan cheese (100 g)
  • 1 ½ cups sugar (225 g)
  • 5 eggs (250 g)
  • 1 ½ cups heavy cream (300 ml)
  • ½ cup sifted all-purpose flour (60 g)

Modo de preparo

  1. Cut two large pieces of parchment paper. Lightly moisten the paper with water and line a 23 cm (9 in) springform pan, carefully stretching the paper without tearing it. Leave about 3 cm of overhang outside the pan. Set aside.
  2. In the bowl of a stand mixer, combine the cream cheese, parmesan, and sugar. Beat on medium speed for 2 minutes or until smooth. Add the eggs one at a time, beating well after each addition until uniform. With the mixer still running, add the heavy cream and beat for 1 minute. Fold in the sifted flour with a spatula until just incorporated.
  3. Pour the batter into the prepared pan, place it on a baking sheet, and bake in a preheated medium oven (180 °C / 350 °F) for 1 hour, or until set. Increase the temperature to 200 °C (400 °F) and bake for another 15 minutes, or until the surface is well browned.
  4. Remove from the oven, let cool completely, and unmold. Remove the paper and serve at room temperature or chilled.

Tip: Basque cheesecake is less sweet, has no crust, and features a beautifully browned surface.
