Baked Rice with Reduced Sodium

Ingredients

  • 1 cup (170g) uncooked rice
  • 1 tablespoon oil
  • 1 small chopped onion
  • ½ teaspoon salt
  • ½ teaspoon AJI-NO-MOTO®
  • 2 cups (400ml) boiling water
  • 1 can (170g) steamed corn
  • 2 medium leeks, sliced
  • 1 large chopped tomato
  • ½ cup (50g) grated Parmesan cheese
  • 3 hard-boiled eggs, halved

Modo de preparo

  1. In a medium baking dish, combine the rice, oil, onion, salt, AJI-NO-MOTO®, and water. Cover with aluminum foil and bake in a preheated medium oven (180 degrees Celsius) for 30 minutes, or until the rice is cooked and the water has evaporated.
  2. Remove from the oven and, using a fork, loosen the rice. Add the corn, leek, tomato, and half of the cheese, and mix. Arrange the eggs on top and finish with the remaining cheese. Return to the oven for another 10 minutes, or until the cheese is golden brown.
  3. Remove from the oven and serve immediately.
