Baked Chicken Fricassée

Ingredients

  • 1 tablespoon oil (15 ml)
  • 1 medium onion, chopped (150 g)
  • 1 garlic clove, chopped (3 g)
  • 2 cups shredded leftover roast chicken (150 g)
  • 1 small carrot, grated (120 g)
  • 1 can canned corn, drained (200 g)
  • 1 packet chicken bouillon powder SAZÓN®
  • 1 carton heavy cream (200 g)
  • 2 tablespoons chopped parsley (10 g)
  • 1 cup grated mozzarella cheese (100 g)

Modo de preparo

  1. In a large saucepan, place the oil and heat over high heat. Add the onion and garlic, and sauté for 3 minutes, or until golden.
  2. Add the chicken, carrot, corn, bouillon, and cream, stir, and cook over medium heat for 1 minute, or until it comes to a boil.
  3. Remove from heat, add the parsley, and stir. Transfer to a medium rectangular baking dish, sprinkle with mozzarella, and bake in a medium oven (180 degrees), preheated, for 15 minutes, or until golden and bubbly.
  4. Remove from the oven and serve immediately.
