World Food Day: Learn how to reuse food with umami recipes
São Paulo, October 2024 – World Food Day, celebrated on October 16th, reinforces the importance of raising awareness about issues related to nutrition and food recycling. To celebrate the occasion, Umami Committee chef Lisiane Miura selected recipes that help prevent food waste.
“There are many creative ways to fully utilize food and also add umami, the fifth taste of the human palate, to dishes, transforming them into delicious and nutritious options,” emphasizes the chef.

RICE CAKE
Preparation time: 20 minutes
Yield: 3 servings
Ingredients
- 1 cup of cooked leftover rice (190 g)
- 1 egg (50 g)
- 1/2 teaspoon of salt (2.5 g)
- 1 small chopped tomato (130 g)
- 1/2 cup of chopped broccoli (50 g)
- 3.5 tablespoons of flour (35 g)
- 2 tablespoons of grated Parmesan cheese (8 g)
Instructions
- In a medium bowl, combine the rice, egg, salt, tomato, broccoli, flour, and cheese and mix. Using two tablespoons, shape into 9 dumplings and deep-fry them, one at a time, in moderately hot oil for 3 minutes, or until golden brown. Drain on paper towels and serve immediately.
Tip: If you prefer, prepare them in an air fryer. To do this, place the dumplings in the greased basket and brush with oil. Cook in a preheated air fryer at 180 degrees Celsius for 10 minutes, turning halfway through, or until golden brown. Remove from the air fryer and serve immediately.
ROASTED CHICKEN FRICASÊ
Preparation time: 20 minutes (+ 15 minutes in the oven)
Yield: 6 servings
Ingredients
- 1 tablespoon oil (15 ml)
- 1 medium onion, chopped (150 g)
- 1 clove garlic, minced (3 g)
- 2 cups shredded leftover roast chicken (150 g)
- 1 small grated carrot (120 g)
- 1 can drained canned corn (200 g)
- 1 sachet SAZÓN® powdered chicken broth
- 1 carton heavy cream (200 g)
- 2 tablespoons chopped parsley (10 g)
- 1 cup grated mozzarella (100g)
Preparation
- In a large saucepan, heat the oil over high heat. Add the onion and garlic and sauté for 3 minutes, or until golden brown.
- Add the chicken, carrots, corn, chicken broth, and cream, stir, and cook over medium heat for 1 minute, or until boiling.
- Remove from heat, add the parsley, and stir. Transfer to a medium rectangular baking dish, sprinkle with mozzarella, and bake in a preheated oven at 350°F (180°C) for 15 minutes, or until golden brown.
- Remove from oven and serve immediately.
BREAD WITH TOMATO
Preparation time: 10 minutes
Yield: 6
Ingredients
- 1 medium tomato, peeled and coarsely grated (150 g)
- 2 tablespoons olive oil (30 ml)
- 1 pinch salt (0.4 g)
- 1 pinch black pepper
- 1 clove garlic, minced (5 g)
- 6 slices Italian bread (loaf), toasted (or use stale French bread, toasted)
Instructions
- In a bowl, place the tomato and add the olive oil, salt, pepper, and garlic, and mix.
- Arrange on the bread slices and serve immediately.
Tip: “Pan con Tomate” is a very popular snack in Spain.
