Umami Is the Theme of an International Symposium | Press
Doctors and nutritionists will be able to participate in the first edition of the Umami Symposium and the new discoveries about monosodium glutamate, which takes place on August 14 in the city of São Paulo.
The event will feature international professionals and researchers from the Institute for Glutamate Sciences in South America (IGSSA)—an independent organization dedicated to research on Monosodium Glutamate and the umami taste in Latin America—and aims to spread awareness of umami—the fifth basic taste of the human palate—as well as inform healthcare professionals about the benefits of monosodium glutamate.
The event will open with a lecture on “History, Physiology: mechanisms of glutamate in the oral and gastrointestinal systems and the benefits of monosodium glutamate,” presented by Ana Sangabriel, a researcher in Receptor Physiology at the University of Tokyo and a Master of Nutrition. Next, Joel Faintuch, PhD in Gastroenterology from the University of São Paulo (USP), will present “Amino acids as food substances.” Manuel Baldeón, PhD in Immunology and Nutrition from the University of Illinois, will address “Glutamate in breast milk.”
After the coffee break, lectures will resume with a presentation by Ivan Araújo, PhD in Neurophysiology from Oxford University, who will speak on “Umami taste in the human brain.” The event will conclude with a lecture by Professor Sonia Albarracín, PhD in Chemistry from Pontificia Universidad Javeriana–Bogotá, on “The effects of glutamate on the brain.” At the end, participants will have the opportunity to discuss the topics in a roundtable with experts and the audience to clarify questions and delve deeper into the subject. A cocktail reception will follow at the venue.
