January 2019 – This Friday (25th) marks the anniversary of the city of São Paulo. To celebrate the date, the Umami Committee—an organization responsible for promoting the fifth basic taste of the human palate in Brazil—has selected a very flavorful staple of São Paulo cuisine: special bauru.

Easy to prepare, this São Paulo icon is based on red meat, a highly protein-rich ingredient that delivers umami—the fifth taste alongside sweet, salty, sour, and bitter—in a pronounced way, making the dish even more delicious.

Special Bauru

Ingredients

  • 4 French rolls
  • 300 g sliced roast beef
  • 1 medium tomato, sliced (150 g)
  • 2 pickled cucumbers, sliced
  • 2 cups (tea) water (400 ml)
  • 150 g sliced Prato cheese
  • 150 g sliced Swiss cheese

Directions

Slice the rolls in half horizontally. On one half of each roll, arrange the roast beef, tomato, and pickles. Set aside.

In a large nonstick skillet, add the water and place over low heat to warm. When the water begins to bubble, add the Prato and Swiss cheeses and mix with a fork until the cheeses melt and form a uniform, elastic mass. Drain, discarding any excess liquid left in the skillet. Distribute the cheese over the other halves of the rolls, close the sandwiches, and serve immediately.

Serves: 4.
Prep time: 10 minutes.

UMAMI

It is the fifth basic taste of the human palate, discovered in 1908 by Japanese scientist Kikunae Ikeda. It was scientifically recognized in 2000, when researchers at the University of Miami confirmed the existence of specific receptors for this taste on the taste buds. The amino acid glutamic acid and the nucleotides inosinate and guanylate are the main umami substances.
