Refined and Practical: Salmon Tartare is an Easter Lunch Option
Nutritionist shows step-by-step preparation of this flavorful dish
March 2021 – For many, Easter, celebrated on April 4th this year, is a moment to be with family and create fun activities like chocolate egg hunts with children. But while celebrations have not yet fully returned to normal, this date can be a great opportunity to venture into the kitchen and try new recipes.
To celebrate the holiday virtually and safely at home, Umami Committee nutritionist Mariana Rosa shared a delicious recipe for Salmon Tartare. “This dish is a great option for creating something with new flavors. The combination of salmon and shiitake, which provide the umami taste, seasoned with ginger and soy sauce, brings a mix of sensations and makes lunch even tastier,” she points out.
SALMON TARTARE
Ingredients
- 300 g skinless salmon fillet, finely chopped
- 1 ½ tablespoons soy sauce (22.5 ml)
- 1 teaspoon freshly grated ginger
- 2 dried shiitake mushrooms, grated
- 1 tablespoon olive oil (15 ml)
Preparation Method
- In a bowl, place the salmon, soy sauce, ginger, and mushroom, and mix well. Drizzle with olive oil and gently stir until the mixture looks glossy.

Tip: Salmon tartare is a modern French adaptation of the very traditional dish known as steak tartare. Today, the concept of tartare refers to any type of ground/chopped meat prepared raw and marinated with other ingredients.
Prep time: 15 minutes

UMAMI
Umami is the fifth basic taste of the human palate, discovered in 1908 by Japanese scientist Kikunae Ikeda. It was scientifically recognized in 2000, when researchers at the University of Miami confirmed the existence of specific receptors for this taste on the taste buds. The amino acid glutamic acid and the nucleotides inosinate and guanylate are the main umami substances. The two main characteristics of umami are increased salivation and the continuation of taste for a few minutes after eating. To learn more, visit www.portalumami.com.br.
