São Paulo, August 2023 – Enjoying a music festival with friends is a very special moment. The audience connects with the artists, creating a unique energy, as well as memories to collect.
To keep up the pace during the marathon of shows, it is necessary to be well-fed and hydrated. “Eating something lighter that provides energy before the event is important to withstand many hours in motion,” says Umami Committee chef Lisiane Miura.
“A great option is to incorporate umami foods into the menu. In addition to being delicious, they promote increased salivation, and studies show that this taste is related to satiety,” the specialist explains.
Umami is the fifth basic taste of the palate and is naturally present in foods that contain the amino acid glutamate, such as tomato, meats, fish, mushrooms, corn, matured cheeses, and other vegetables.
To ensure energy from start to finish at the party, before the event opt for quick, tasty, and umami-rich dishes. Check out the two recipes selected by the chef that can’t be left off your list: a delicious special bauru sandwich and a practical quesadilla with cheese, lettuce, and tomato.
SPECIAL BAURU
(Preparation time: 10 minutes)
Serves: 4 portions

Ingredients
- 4 French bread rolls (200 g)
- 300 g sliced roast beef
- 1 medium tomato, sliced (150 g)
- 2 pickles, sliced (50 g)
- 2 cups water (400 ml)
- 150 g sliced prato cheese
- 150 g sliced Swiss cheese
Directions
- Cut the bread rolls in half horizontally. On one half of each roll, place the roast beef, tomato, and pickles. Set aside.
- In a large nonstick skillet, place the water and heat over low heat. When the water starts bubbling, add the prato cheese and Swiss cheese, stirring with a fork until the cheeses melt and form a uniform, elastic mass.
- Drain, discarding any excess liquid left in the skillet. Spread the cheese over the other halves of the rolls, close the sandwiches, and serve immediately.
CHEESE, LETTUCE, AND TOMATO QUESADILLA
(Preparation time: 30 minutes)
Serves: 1 portion

Ingredients
- 1 wheat tortilla (15 g)
- ½ cup shredded mozzarella (50 g)
- 1 leaf iceberg lettuce, chopped (20 g)
- 1 small tomato, seedless, chopped (100 g)
- 1 pinch salt (0.4 g)
- 1 teaspoon olive oil (5 ml)
Directions
- Heat a nonstick skillet over medium heat. Place the tortilla and cook for 1 minute, or until warm.
- Flip it over and top with cheese, lettuce, and tomato. Season with salt and olive oil, and fold in half. Cook for another minute, or until melted.
- Remove from heat and serve hot.
UMAMI
It is the fifth basic taste of the human palate, discovered in 1908 by Japanese scientist Kikunae Ikeda. It was scientifically recognized in 2000, when researchers at the University of Miami confirmed the existence of specific receptors for this taste on the taste buds. The amino acid glutamic acid and the nucleotides inosinate and guanylate are the main umami substances.
