Pocket Show featuring umami taste and beer pairings takes the stage at Brazil Beer Cup 2021
The beer competition takes place in the city of Florianópolis and will be followed by the Beer Summit 2021 conference, broadcast online.
November 2021 – Today, November 24, at 4 p.m., during the Brazil Beer Cup 2021, a Pocket Show featuring a tasting and pairing of foods that provide the umami taste with beers will take place, led by Food Science PhD and Umami Committee consultant, Hellen Maluly. The event is organized by the Science of Beer Institute and held in Florianópolis, Santa Catarina.
The occasion will include the participation of 60 judges, 20 guests, and press coverage of the event, following all safety protocols. Umami taste specialist Hellen Maluly was also invited to give the lecture “Pairing ‘Umami’ with Beers: physiological aspects and consumer preferences,” which will be streamed during the Brazil Beer Summit—an online beer congress held from November 29 to December 1, featuring speakers from around the world.

“Spreading knowledge about sommellerie, styles, service, and pairing is a great opportunity to explain how foods containing the umami taste can pair with the flavors of beers. The main physiological mechanisms for better pairing choices between umami foods and beers will be presented, as well as consumer preference studies regarding the quality of the perceived taste,” explains Hellen.
In addition to the lecture, the Umami Committee consultant will conduct a discrimination and intensity test of the basic tastes with the judges, providing an incredible sensory experience.
BRAZIL BEER CUP
The Brazil Beer Cup is a beer competition that opens doors for breweries from all over Latin America, gypsy breweries, and home brewers with the Catharina Sour style (the only Brazilian style recognized internationally).
The competition takes place from November 21 to 24 in Florianópolis/SC, at the Hotel Porto Sol Ingleses, Rua do Marisco, 80, Ingleses, Florianópolis. The Brazil Beer Summit conference will be held online from November 29 to December 1, featuring speakers from around the world.

UMAMI
It is the fifth basic taste of the human palate, discovered in 1908 by Japanese scientist Kikunae Ikeda. It was scientifically recognized in the year 2000 when researchers from the University of Miami confirmed the existence of specific receptors for this taste on the taste buds.
