Go beyond tender: chef teaches how to make dinner tastier with raspberry sauce

December 2019 – The time of year has arrived when preparations for the Christmas feast are in full swing. It’s that moment when creativity comes to the table and the goal is to wow the whole family. And to celebrate this date, there’s nothing better than reinventing a traditional tender and adding a special sauce.

Chef and nutritionist Lisiane Miura, from the Umami Committee, explains that the delicious combination of pork— which provides the umami taste, the fifth basic taste alongside sweet, salty, sour, and bitter— with raspberry sauce creates a striking gustatory experience.

“The contrast among the tastes causes an explosion of flavors, and the presence of umami on the plate allows those flavors to linger more noticeably, boosting saliva production, which supports oral health and leaves you wanting more,” the chef concludes.

RASPBERRY SAUCE FOR TENDER

Ingredients

  • 300 g raspberries
  • 150 ml red wine
  • 1 medium onion, grated (110 g)
  • 2 tbsp honey (36 g)
  • ½ tsp salt
  • A pinch of black pepper
  • 2 tbsp olive oil (20 g)

Directions

  1. Blend the raspberries and red wine in a blender until smooth.
  2. Separately, sauté the onion in the olive oil.
  3. Add the raspberries, honey, salt, and pepper.
  4. Cook over low heat, stirring occasionally, until thickened.
  5. Spoon over the tender after roasting.

Yield: 8 servings.
Prep time: 15 minutes.

UMAMI

It is the fifth basic taste of the human palate, discovered in 1908 by Japanese scientist Kikunae Ikeda. It was scientifically recognized in 2000, when researchers at the University of Miami confirmed the existence of specific receptors for this taste in the taste buds. The amino acid glutamic acid and the nucleotides inosinate and guanylate are the main umami substances.
