São Paulo, July 2016 – July has arrived, bringing school holidays. It’s time to play, travel with parents, and sleep in. But for these moments to be perfect, it’s essential to pay attention to healthy eating.
A varied list of nutritious dishes ensures a balanced and healthy menu – the “fuel” for all the fun. With that in mind, the Umami Committee presents Chicken Pie and Turkey Breast Quiche recipes that kids will love! Both dishes feature umami-rich foods – such as tomatoes, cheese, and chicken – that improve food acceptance, increase salivation, and prolong flavor. Holidays with umami are much more delicious!

Chicken Pie
Ingredients:
Crust
- 4 1/2 cups all-purpose flour
- 1 1/2 cups unsalted butter, chilled
- 3 tablespoons cold water
- 1/2 teaspoon salt
- 1/2 teaspoon monosodium glutamate
Filling
- 2 tablespoons olive oil
- 1/2 medium onion, chopped
- 2 ripe tomatoes, peeled, seeded, and chopped
- 1/2 cup green olives, pitted and chopped
- 1 teaspoon salt
- 1 packet monosodium glutamate
- 850 g large chicken breast, bone-in and skinless, cooked and shredded
- 2 tablespoons chopped parsley
- 1 cup cream cheese or cooking requeijão
Preparation method:
- In a large bowl, mix the flour, butter, water, salt, and monosodium glutamate, and knead with your hands until smooth and homogeneous. Cover with plastic wrap and refrigerate for 30 minutes.
- Meanwhile, prepare the filling: in a medium saucepan, heat the olive oil over high heat and sauté the onion for 2 minutes. Add the tomato, olives, salt, and monosodium glutamate, and cook over medium heat, partially covered, for 5 minutes.
- Stir in the chicken, parsley, and cream cheese. Remove from heat and let cool slightly.
- Line the bottom and sides of a round baking pan with part of the dough, reserving the rest for the top.
- Spread the filling evenly, roll out the remaining dough with a rolling pin, and cover the pie.
- Brush the surface with an egg yolk mixed with 1/2 teaspoon cold water.
- Bake in a preheated medium oven (180°C) for 45 minutes.
- Serve immediately.
Yield: 8 servings
Preparation time: 1 hour (+45 minutes baking)
Turkey Breast Quiche
Ingredients:
- 3 cups all-purpose flour (350 g)
- 1 cup unsalted butter (200 g)
- 1 egg
- 1 teaspoon salt
- 1/2 cup smoked turkey breast, chopped
- 1/2 cup shredded mozzarella
- 3 beaten eggs
- 1 cup milk (200 ml)
- 2 tablespoons grated Parmesan cheese
Preparation method:
- In a bowl, mix the flour, butter, egg, and 1/2 teaspoon salt, and knead well.
- Refrigerate for 30 minutes.
- Line a large tart pan (26 cm diameter) with the dough, prick with a fork, and bake in a preheated medium oven (180°C) for 15 minutes.
- In another bowl, combine the turkey breast, mozzarella, beaten eggs, milk, and remaining salt, and mix well.
- Pour over the crust, sprinkle with Parmesan, and bake in a preheated medium oven (180°C) for another 30 minutes, or until golden.
Yield: 8 servings
Preparation time: 40 minutes (+45 minutes baking)
Tip: For easier handling, roll out the dough between two sheets of plastic before lining the pan.

It is the fifth basic taste of the human palate, discovered in 1908 by Japanese scientist Kikunae Ikeda. It was scientifically recognized in 2000 when researchers at the University of Miami confirmed the existence of specific receptors for this taste on the taste buds.
