Chef Shares Tips for Preparing a Mother’s Day Lunch Worthy of a Restaurant
Salmon with Vegetables recipe is a tasty option for a homemade meal
May 2021 – On May 9, Brazil celebrates Mother’s Day. Due to the social isolation measures established to prevent the spread of the coronavirus, it is necessary to find new ways to celebrate special dates safely.
To help with this task, chef and nutritionist of the Umami Committee, Lisiane Miura, brings a step-by-step recipe for Salmon with Vegetables and gives instructions on how to prepare a lunch worthy of a professional kitchen at home. “Although nothing can replace a meal at the best restaurant, it is possible to create your own gastronomic experience without leaving home. This dish brings together flavorful ingredients, such as the fish that provides the umami taste,” explains the expert, referring to the fifth basic taste of the human palate, responsible for prolonging flavor and increasing salivation.
The chef also offers tips for those who will spend the date close to family and want to make the meal even more special. “Prepare the food in advance and think about the details of the table setting with a tablecloth or placemats, invest in candlelight for ambiance, and don’t forget the decoration. Another essential element is the starter: with three types of bread in the basket and two spreads, you can create a delicious appetizer. Lastly, and just as important, prepare a special music selection,” she concludes.
SALMON WITH VEGETABLES
Ingredients
- 4 pieces of salmon fillet, skinless (1 kg)
- Juice of 1 lemon (30 ml)
- 1 1/2 teaspoons salt (7.5 g)
- 1 cup cauliflower florets (70 g)
- 1 cup broccoli florets (70 g)
- 1 medium carrot, sliced (150 g)
- 10 green beans, cut into 3 parts (100 g)
- 4 teaspoons olive oil (20 ml)
Preparation Method
- In a bowl, season the fish with lemon juice and 1 teaspoon salt. Cover with plastic wrap and let marinate in the refrigerator for at least 15 minutes. Set aside.
- Place each fillet on a piece of aluminum foil (25 x 30 cm).
- Top with vegetables and drizzle each portion with some of the marinade and 1 teaspoon of olive oil previously mixed with the remaining salt.
- Wrap tightly, leaving space inside for air circulation, and place on a large baking sheet. Bake in a preheated medium oven (180°C) for 30 minutes.
- Remove from oven, carefully open the packets to avoid burns, and serve immediately.
Yield: 4 servings
Preparation time: 20 minutes (+ 15 minutes marinating + 30 minutes baking)
Umami
Umami is the fifth basic taste of the human palate, discovered in 1908 by Japanese scientist Kikunae Ikeda. It was scientifically recognized in 2000, when researchers at the University of Miami confirmed the existence of specific receptors for this taste in the taste buds. The amino acid glutamic acid and the nucleotides inosinate and guanylate are the main umami substances.
