Classes will be held bimonthly until March 2015.
Starting May 27, 2014, Chef Mariane Sato will be teaching classes on umami, the fifth basic taste of the human palate, at Y&S Culinary School, in São Paulo. With the aim of spreading knowledge and teaching recipes with ingredients that provide the Umami taste, the course will take place in May, July, September, and November of 2014, as well as in January and March of 2015.
The course is open to the general public and anyone interested in gastronomy. “The meeting will last three hours, with the theoretical part lasting at most 40 minutes. This is because the main goal is to get hands-on and experience Umami in practice,” explains Mariane. Among the dishes that will be taught are: Mushroom Bruschetta, Mini Three-Cheese Pie, Umami Paella, Creamy Codfish, Spinach Risotto with Coalho Cheese, and Corn Cream with Parmesan Crunch.
Mariane emphasizes that interested participants can attend more than one class, since new recipes will be taught at each session. “There will be three or four different recipes per class, which means many opportunities to learn new dishes and train the perception of the Umami taste,” explains the chef.

A chef, graduated from Senac in Culinary Technology, Mariane Sato is a specialist in business management in food services and also trained in Creative Cuisine at CETT-UB (Spain). She has ten years of experience in the field.
